Our perfected version of the Whiskey Sour

PLEURE PAS PHYLLIS!

– 1.5 oz Équinoxe Amaretto

– 0.5 oz bourbon whisky

– 1 oz lemon juice

– 0.25 oz simple syrup

– 1 egg white

How to make it

Fill a Marie-Antoinette type glass (champagne coupe) with ice and leave to cool during preparation.

In a shaker filled with ice, pour all the ingredients except the egg white and mix vigorously for 10-15 seconds.

Add the egg white to the liquid and mix vigorously for 15-20 seconds.

Using a colander and a sieve, double-strain into the cup after removing the ice from it.

Gently tap bottom of the shaker on the sieve in order to get a denser foam.

The Phyllis Myth

In Greek mythology, a sad legend says that the almond tree is the fruit of intense love story. Phyllis was the daughter of the King of Thrace. She fell in love with Demophon, one of Theseus' sons as he was returning from Troy. They swore eternal love and were about to get married, but Demophon had to return to Athens where his father had just died. Months passed and Demophon still did not return. Phyllis, convinced that her love would not return, committed suicide by hanging. The Gods, touched by this proof of such intense love, transformed her into an almond tree, a tree which would begin to flower when the young man returned to offer her his eternal love.
